I have been grilling a lot lately because of the photography class that I am in right now. As I am grilling all of these delightful meals, I realized that sometimes simple is better! Actually, simple is always better so I pulled out something that we used to make over the campfire; Hobo Dinner!
Think of the ingredients as something cheap because that is the whole concept of this dish. Onions and potatoes are very inexpensive and you if you are luckier than me you have them in your vegetable garden. Those curly things are garlic scapes and I happen to have gotten those from a friend but if you grow garlic then you will get them from your plants.
You can season it however you want but this is what I used. I picked Lawry’s seasoned salt because that was the seasoning that we would take camping for this meal. I love this barbecue seasoning from McCormick so I thought that would spice things up a bit. <~~ Did you like that pun? HAHA!
Chop and mix it all together and you will get this beautiful bowl of goodness.
I just put my chicken breast in the foil without any oil. Do what you wish but my chicken did not stick to the foil. I put about 5 scoops of the potato mix with one chicken breast and this made 2 humongous pouches.
I cooked this bad boy for about 20 minutes on the grill so that the chicken and the potatoes were done. It was SO GOOD! This is a really good way to cook a bunch of leftovers from a party because it is meant to be a hodgepodge of food, again back to the whole hobo aspect of the meal.
