{Almost} Paleo Carrot Cookie Recipe

I almost made a true Paleo carrot cookie recipe, almost, but not quite. You should be proud if you are a part timer like me! I’m all about baby steps because this whole Paleo Diet thing is incredibly overwhelming to think about doing all at once. You want me to throw away EVERYTHING and buy EVERYTHING organic- AKA double the price of conventional food? You can blow that one out your tush because that is a recipe for disaster. 

Here’s the deal. Paleo or not, these carrot cookies are pretty freaking tasty. When I say tasty I mean they were approved by five different cookie lovers ranging from 20 months to 50+ years old. My prediction is you will be gobbling these cookies up like they were chock-full of flour, sugar, and butter. Bazinga! These cookies don’t have any of those ingredients in them. ?

{Almost} Paleo Carrot Cookie Recipe

Ingredients

  • 2 c Ola! Granola (Free s/h with- THH2013)
  • 3 1/4 c Almond meal
  • 1 tsp Salt
  • 1/4 tsp Cloves
  • 1/4 tsp Nutmeg
  • 1/2 tsp Cinnamon
  • 1 tsp Baking soda
  • 1/2 c Coconut oil
  • 2 Eggs
  • 1 tsp Vanilla
  • 1/2 c Honey
  • 2 c Carrot pulp

Instructions

  1. Preheat the oven to 375.
  2. Combine all of the dry ingredients.
  3. Add in the remaining ingredients and mix well.
  4. I used a cookie baller to keep my cookies the same size. I noticed the cookies don’t flatten themselves so I flattened them before baking. (Very similar to the fork on a peanut butter cookie.)
  5. Bake on the top rack for 12 minutes.

Random cookie notes:

  • Using the carrot pulp from this juice recipe makes me feel all crunchy inside. I never thought I would see the day where I cared this much about wasting food and eating healthy. Maybe I can be an adult?
  • Don’t put the cookies on the bottom rack of the oven or they will burn.
  • I need to live by a Trader Joe’s so I can spend money more than once a month. Wahh! Maybe that’s why Michael moved us away from Oakland County? I just want to be left alone to shop for my new food hobby! The food hobby I’m sure none of you care about because it’s A- not entertaining and B- not entertaining. I fail.

Ola! Granola

Ola! Granola is fantastic! It’s weird how quickly you start to pay attention to what is in your food and notice words like pure maple syrup, non-GMO, pure vanilla, etc. Even though grains aren’t Paleo friendly, I’m OK with my choice to include some crunch into my almost Paleo carrot cookie recipe. I loved my cookie creation and wouldn’t trade it for the world!
