I was slightly peer pressured into preparing a berbere salmon recipe this week. And by slightly, I totally mean Facebook ads kept taunting me with a sweet Plated deal. I don’t get it. Facebook forgets to notify me when a friend tags me in an unflattering picture but you bet your perfectly toned tushies I see a crap ton of sponsored garbage in my newsfeed. Pay to play, guys. Why is this blog worthy? Look… I share cool shit with you when it helps me reach wifey status. It’s true. Here I am, on the corner of wifey and freak on the street, with a sign saying I earn a free meal when you use my Plated link. You guys… a girl has to eat. Literally. Like, I have to feed my child on a daily basis.

There have been oodles of discussions regarding the quality of Plated ingredients so your mileage could very well vary. Meh. The ingredients in my box were the same quality as Kroger so I was super pumped. Think about how excited you get when you go grocery shopping sans toddler. Yep. I was pumped like that.

Except… I’m pretty sure I ordered it online and it arrived at my door via FedEx. That, my friends, falls under the grocery shopping solo umbrella.

BERBERE SALMON INGREDIENTS

  • Onion
  • Kale
  • Lemon
  • Red potatoes
  • Red wine vinegar
  • Whole grain mustard
  • Wild Alaskan salmon
  • Berbere
  • Maldon salt

All you have to do is dice the onions and let them marinate in the vinegar. (Do this as the potatoes are cooking.) Mix the red vinegar, onions, cooked potatoes, mustard, and kale all together with your hands so the kale wilts. And the third step is a breeze… you put berbere, salt, and pepper on the salmon and bake it. SUPER SIMPLE!

I guess this means I dig it? Sort of. You see, I picked the best option for our paleo lifestyle. It was a delicious meal with a slight paleo faux pas (potatoes) but, at the end of the day, I’m the only one in my household who cares about the occasional potato treat because the men of the house don’t have to deal with MS related garbage. Bastards!
