CHEESY POTATO & BACON SOUP

Fall is by far my favorite time of year because of the crisp weather, cute clothes and feel good food! I had a hankering for some potato soup recently because I haven’t made any since I started dating Michael and that was years ago! What is wrong with me?

Cheesy Potato Soup

Ingredients

  • 20oz Simply Potatoes- Diced with onions
  • 1c Mozzarella cheese
  • 1c Cheddar cheese
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2c chicken broth
  • 2 cans Cream of mushroom soup
  • 2.5oz Bacon bits
  • 1 tbls Garlic
  • Optional- Bread bowl

Instructions

  1. In a large pot mix salt, pepper, broth, soup and bacon bits together. Bring this to a boil over medium heat.
  2. Meanwhile, in a skillet cook the potatoes according to the package.
  3. Remove the soup from the heat once it starts bubbling and add the cheese and potatoes in.
  4. Serve in a bread bowl or just in a bowl.

These potatoes are simple (pun intended) to make and all I needed was some oil heated up in my pan. Let me just say that these get the lazy person stamp of approval! I did not have to wash, peel or chop these bad boys and you all know that I am not into more work than I have to do. :)

I brought everything but the cheese and potatoes to a slow boil and turned off the heat when it was mixed together well. Once I removed my pot from the heat I added the potatoes and cheese and mixed it in. Have I mentioned how easy this recipe was yet?

Viola! This is so scrumptious and nobody would even notice that it wasn’t entirely homemade! I barely let it cool down before I got myself a bowl of it and I am pretty sure that it was 10AM as well so you know that I was full the whole day. :)
