Easy chicken club bruschetta recipeRiddle me this. What do you take for granted in your 20s, dream of in your 30s and 40s, and enjoy in your 50s?

Date nights. Little black dresses. Hanky panky whenever and wherever. Knowing that you won’t pass out as soon as your head hits the pillow. Breasts that defy the laws of gravity. Shopping sans children. Fancy dinners.

Yeah, you know what I’m talkin’ ’bout.

Which is why I want to help you master the art of in-home fancy date nights. I make no promises that you won’t pass out during the movie, but I do promise that your belly will be full. I think they call that compromise?

  • 6 Tbls tomato
  • 3 Tbls Fontinella®
  • 3 Tbls bacon
  • 3 Tbls chicken
  • 1 Tbls mayo
  • 1.5 Tbls red onion
  • 1/4 tsp pepper
  • 1/2 tsp herbs

And don’t you dare stray from these exact values, ya hear?

This recipe is so foolproof that it’s possible to throw together whatever combination tickles your taste buds. I just wanted to give you an idea of where to start. I will never forget that one time I printed out a simple recipe and Michael could not figure it out…

For real. He had no idea what it meant to fold the ingredients.

Lucky for you, all this recipe requires is a quick chop of the ingredients so they are bite-size, and an even quicker mix of said bite-size ingredients.

Next, broil slices of your favorite bread (I used a loaf of ciabatta.) on high for about 5 minutes so they have a hint of toasty goodness. There’s something about the warm, crunchy bread with a chilled topping that gives me a food coma.

Totally optional but worth the extra step, when the bread comes out of the oven, rub a garlic clove all over one side. Just don’t go and breathe on Joe-Schmo sitting next to you because you will absolutely have a mouth only a spouse could love.

I can say that because I threw down on some bruschetta. I’m an expert.

Now, for all of you who actually leave the house to go on dates, Stella® cheeses has a NYC Dinner & A Show contest going on right now. The prize is a three day, two night trip to New York City with a $500 gift card, dinner for two, and two tickets to a Broadway show. Good luck!

Be sure to check out the rest of the cheesy goodness on PinterestInstagram, and Facebook.
