
I am so excited to share this paleo chocolate bacon cupcake recipe with you for a few reasons! First, this is pretty much the last paleo recipe I will create in 2013! The holidays are kicking off next week with an amazing candy corn party and that means paleo schmaleo in our household! Secondly, these bacon cupcakes are SO delightful. I’m talking about a bacon surprise only to be discovered as you take your second and third bite. The first bite is used to investigate the flavor and process whether or not they are delicious enough to continue. I assure you these cupcakes are nom-a-rific!

Do you remember my red velvet mustache cookies? This cupcake recipe is a spin on that one, minus the beet, because there is no sense in recreating something when you can modify it just fine.

PALEO CHOCOLATE BACON CUPCAKE INGREDIENTS
- 1 1/2 c almond meal
- 1 1/4 c coconut sugar
- 1 3/4 c shredded coconut
- 1/4 c arrowroot powder
- 1/2 t baking powder
- 1/4 t salt
- 1 T cocoa
- 1/4 apple (2 slices)
- 1 T vanilla
- 1/2 t almond extract
- 4 eggs at room temperature
- 1 package Hormel natural bacon

Holy mind blown, guys! I have minimal experience with cast iron but consider myself IN LOVE with it after using the cast iron grill for my stuffed burger and now using a bacon press with it! Having a Bacon Press needs to be one of your goals in life because ohemgee did my bacon cook beautifully! I looked like a kitchen pro with how perfect my bacon was! And if I wasn’t so dang lazy I might feel like I was becoming some sort of amazing housewife.

Be strong as you try and fight off the overwhelming urge to pick up the food processor and dump the bacon in your mouth. I feel your pain. I think a high ranking someone should declare bacon as its own food group so we are encouraged to eat as much bacon as we would like!

There might come a time when I can put together the recipe video I made for these paleo chocolate bacon cupcakes, but now is not the time. I assure you the recipe is stupid simple and you can throw everything in a bowl, much like you would every single other cupcake recipe, put an ice cream scoop of batter into each cup (overfilling is OK because paleo goods don’t rise much), and bake for 17-20 minutes at 350.
So simple! There isn’t anything I hate more than a paleo recipe where you have to separate, beat, add, shake, shimmy, and more to create the recipe. Extra steps are beyond annoying because I’m in my kitchen and all I want is the chocolate goodness to get in my belly!
