I don’t know about you but the word pie isn’t in my vocabulary, let alone paleo pumpkin pie. Pie is just… sooo not cake. Pie is for old people and I like to think of myself as the modern day Peter Pan. Forever immature is not how my momma raised me, but that’s what she ended up with!

PALEO PUMPKIN PIE RECIPE

PALEO PIE CRUST

  • 2c Almond meal
  • 2/3c Arrowroot Powder
  • 1/4t Salt
  • 2T Coconut oil
  • 2 Eggs

Mush Mix everything together in the food processor and press the doughy mixture into your Good Cook Bakeware.

PALEO PUMPKIN PIE FILLING

  • 2c Pumpkin puree
  • 1/2c Maple syrup
  • 1c Coconut milk
  • 2 Eggs
  • 2T Honey
  • 2t Vanilla
  • 2t Cinnamon
  • 1/4t Ginger
  • 1/2t Nutmeg
  • 1/4t Clove

Toss everything into a mixer, blend until smooth, and pour the pumpkin mix into the pie crust. You know me and my inability to prepare something needing more than one step. My brain just isn’t programmed for all of the fancy recipes you find on Pinterest. Meh, someone needs to create a site for lazy bakers to unite and drink. Yes, drinking sounds delightful.

Tip- Figuring out how long to bake something is the hardest part for me because I think everything is going to burn, forcing me to start over. I get… umm… annoyed (yes, let’s go with annoyed) if I have to start a recipe over, so I started at 40 minutes and ended up at 60 minutes.

Note- My mom didn’t like the additional ginger, clove, and nutmeg, so leave the spices at home if you are a minimal spice type of person.

And then this happened. I was upset at first because, you know, Pinterest only likes pretty food, and my paleo pumpkin pie was now sporting a less than attractive crater. When I finally realized I wasn’t recreating my recipe, I started lowering my aperture to the level of my maturity for one decent shot.
